If poetess and ambassadress aren't used anymore, the only reason I see for waitress and actress being used is that people *like* those words. Ambassador Shirley Temple (I think she shouldn't have lost her famous name) Brown said that an "ambassadress" was what she wore. If all actresses and waitresses objected at being called that way, we wouldn't have those "sexist" words.
