You're not sufficiently confused yet  ! :-)  When you go to take your 
flight test for your glider rating your will have a column on the application
titled SOARING TIME to be filled in.  I haven't been able to get a straight 
answer on that myself.  I've assumed it means PIC time.

For your glider questions, I would log all the time where you are the pilot
(solo or not, I presume solo until your license) as PIC time. Fill in the 
solo column if desired but  don't expect anyone to ask for that number.

Your instruction times are to be logged as DUAL and are redeemable toward
a rating if applicable (glider => SEL can count glider instruction as dual 
toward the SEL )

"Cross Country" is a flight beyond the minimum leg distance for a Student
X-C  ( I think the number is 50 miles, check this in the regs.)
