[rec.hunting] Butchering, dressing book recommendation

Someone asked about game dressing books. The one I like is:

Butchering, Processing and Preservation of Meat - Cattle, Hogs, Sheep, Game,
Poultry and Fish. The author is Frank Ashbrook, and is published by Van 
Nostrand Reinhold. ISBN 0-442-20377-2.

I don't know if this is the best one, it's the best I've seen. Mine is in
hardback, I don't remember what it cost. It's got lots of pictures and
diagrams. I have my animals at home butchered by a professional, I've
watched him (and video taped) him doing cattle, pigs and sheep for me -
and he does just what the book says should be done. If you can video
tape someone doing this, by all means do so. It is invaluable if you ever
have to do it yourself (and I've done that with injured animals).

A quote from my butcher is in order "With moose hunting, the fun stops
when you pull the trigger" - and this guy cuts stuff up for a living.
It's food for thought....
