Sorry, couldn't get through to Dorsai. Anyway,
Since you aren't posting this in the Mud group, I will suggest a mud.
No graphics.  But since Mud's are multi-player, real people as enemies and
co-patriots, the amount ofharacter interaction is very good and never
predictable.  There are dungeon type mud games (star trek, future, post-
apocolyptic, et al).
But for indi games, my first suggestion is Quarterstaff.  Not the hardest,
but the graphics, which are not animatied, are very decent.  The goal is
ok, the monsters are formidable and there is only a slight bit of
having to really sweat out problems.  Mainly go in there and find it all
and kill all the bad ones.  There are good people that you can befriend and
make part of your team or not.
Lots of people talk about Spaceward Ho! in this group.  I haven't played it,
but I am really interested.
Another suggestion is Wizadry.  Graphics, not animated, fair.  Pretty hard.
You have to make a team.  Lots of repitition though.  Having to get healed,
buy stuff, etc.  I spent something like 50+ hours solving the first version.
Bane of the Cosmic forge is Wiz III.  Lots of new features, but I haven't
touched it for fear of loosing 50 or more hours on it.  Wiz II was disapointing
I solved it in 15 hours.  You get to transfer your characters from Wiz I into
the senerio.
Sim Earth and City are not RPG unless you consider the role of God or Mayor a
role.  These are great.  Eat a lot of time.  And make you look at cities and
environments in a new manner.
One more,
Colony.  Good graphics if you have a faster mac.  Decent if not.  Animated from
your character, a male space ranger, p.o.v.  They had to be just that specific

to exclude... I digress.  Anyway, difficult.  Modern.  Bunches of baddies.

umm, you need a more explicit mail path ...

NetHack - for details read "rec.games.hack", if possible.
        - for mac binaries:  anonymous ftp (again, if possible) to
            linc.cis.upenn.edu {or 130.91.6.8}
            cd pub/NH3.0/mac

and get README.mac first ...
