Yes, but you'll soon find that it's not very worthwhile (for the first part of
the question). Going from 6.0.x to 7 requires that the old desktop file be
updated when you run System 7 for the first time. With a lot of files on your
hard drive, this takes roughly 1 or 2 minutes depending on the size and speed
of your hard drive and the type of processor you have I would imagine. It's a 
bit of a bother to have to wait for this updating to happen every time you
switch back to System 7. And the System (Finder) 7's root window gets cluttered
with all of 7's invisible files when you switch back to 6.0.x. These could be
taken as minor, but they're too annoying for me. Besides, once you use System
7, you'll probably not WANT to go back to 6.0.x. (unless of course you have a
super necessary program that doesn't run under system 7 yet which is very
possible).

As for the second part...

Absolutely! Do you actually think that files/disks created by older systems 
will no longer be readable (if I understand your question correctly)?

The Startup Device CDEV is still there and works fine. I'm not sure what you
mean by the question but if your asking if you can switch back an forth between
system 7 on one HD and system 6 on another, I would have to asume you can. But
like I said, you'll get problems when system 7 is run again after switching to
it.
