Here's my attempt to answer this... anyone yell out if I mess up TOO badly :-)

I was running 7.0b4 since March, and 7.0 release for a few weeks now... and I
have all my color icons working: here's how I did it.

Tools: ResEdit 2.1 (I bought it, but now it's at ftp.apple.com), patience.

I was running Sundesk under 6.0.7, and also had some of the icon archives from
ColorFinder, which uses 'cicn' resources instead of 'icl8' resources.  When I
got 7.0, I used the new ResEdit 'icon family editor' to fix up my apps for
7.0 (I had to have my color icons, after all...).  

1)	Start up ResEdit, open up your file with all your icons (Sundesk Strip
	file or whatever).

2)	Open up each of your apps in turn.  Double click on ICN#, then the
	icons you wish to have be color.

3)	If you have color icons in another file (from step 1), then open up
	the color icon in your other file, and double click on the marquee
	tool (dashed lines).  This highlights the whole icon... then just hit
	command-c to copy.

4)	Go back to your app... click on the 'icl8' box on the right side of 
	your 'icon family editor'.  Hit command-v, and you have a color icon
	pasted in!

5)	To get the rest of the family quickly, go over to the actual-size pix
	of the icons in the family editor.  Use the ICN# to create the ICS#,
	and the icl8 to create the rest: click on the first, drag to the others
	right there on the side.  Use the icl8 to make the masks too... it has
	colors where the icl4 or icn# might be hollow, usually.

6)	Repeat 2 through 5... if you don't have a color icon for a particular
	ICN#, just drag the ICN# picture to the icl8 box in the family editor,
	and color it.  Then do step 5 to get the whole family.

(Most of this I learned from the ResEdit Companion, BTW).

Now, to get color disk icons:  this is a pain, especially if you want ALL your
floppies to be color!  Here's how to get a disk to be color, though... HD or
floppy.

1)	Paste an icon into the "Get Info" box.  It doesn't have to be the one
	you want to actually have.  What this does is create an invisible file
	on that disk named "Icon"... ResEdit can see it.  To do this, just
	choose "Get Info", then choose the icon picture in the upper left of
	the window.  A box will show up, and just paste.  You can get an icon
	picture by doing the "double click marquee" trick in ResEdit...

2)	fire up ResEdit, and open "Icon".  Open up the icon family editor on
	the icon in the ICN# resource for "Icon", then repeat steps 3-5 from
	above to create a whole family of icons for your disk.  

When you're all done, reboot and rebuild the desktop by holding down command
and option (I think, I know which keys but I'm not on my mac to see) while
booting up.  When it's done, you should have all your color icons, including
disks!
