        We all know that there are several ethernet cards for SE and
        MAC II for both thin and thickethernet cabeling on the
        market, but are there cards available for fiber and/or
        twisted pair cabeling running ethernet ?

Yes, if by twisted pair, you mean 10BaseT ethernet standard.  Most
companies have 10BaseT cards (they cost a little more).  Cabletron
has a card for the II (and the SE, I think) that will do Fibre.  It
goes for about $900.  A Recent issue of MacUser did a spread about 
ethernet products.
