As far as I know, there are just two X Window servers for Macintosh. 
They both work fine under MultiFinder.  One is eXodus from White Pine
Software in Nashua, NH.  The other is MacX from Apple.  I'll be
happy to send you details regarding the latter on request.

You CAN run X11 servers over LocalTalk.  I do it all the time in
my office using my Macintosh SE.  If the LocalTalk loop is not
heavily loaded, performance is quite good.  You likely want to have
a DDP/IP gateway (GatorBox or FastPath) if you're using TCP/IP
transport.  This will take the IP packets which are encapsulated
in AppleTalk packets and put them on an Ethernet as naked IP packets.
