Can someone give a brief overview of available programs that allow sending/
receiving faxes on the Mac? Even if you don't have any experience with it I'd
appreciate any titles and company names.  Thanks.

Don:

I've been using the DoveFax Desktop (was $279 from MacWarehouse) om my
IIci--and I've been able to do some pretty powerful stuff on it for a
non-PostScript thing. (I have a need to fax graphic-related stuff a lot.) 
It's Fax Manager application does an A-/B+ job of managing the sent and
received faxes--sending them at delayed times, taking one you've received
and sending it out to someone else, and so on. 

For type, ATM should be used in combination with it--Adobe Type Manager
images nice clean 200dpi letters at any size. I have, additionally, been
able to convert images in Photoshop to 200dpi bitmaps and send them cleanly,
and the latest version of FreeHand (in conjunction with ATM) sends out
QuickDraw images that are at least 80% of what a PostScript image would be
(text along a path defaults to a low-res bitmap, but that's about it). 

It's been reliable, except at first (I got one early) there were several
brands of fax macines I could not send to or receive from. Dove has sent two
new ROMs (or EPROMS, or whatever) to revise the fax hardware, and I seem to
have no machine incompatibilities at this point. No charge. Nice.
The modem seems to work fine as a Hayes-ish 2400 baud modem.

I understand that not all of the DoveFax software is System 7.0 compatible
yet, but that's moot with me, since it will be a long while before I upgrade
to 7.0, because I use a lot of other specific apps that are not 7.0
compatible.
