I was wondering what kind of Mac software there was for the visually impaired. I played around with CloseView, but the way it scrolls around is just plain funky. I was thinking more along the lines of something that would take a standard Mac screen (ie, like on a Mac Plus) but blow it up in size to fill a two-page display. Sigma Displays makes a large screen monitor (19-21") that has adjustable screen resolution. You can set the screen resolution so that the whole screen is filled as if it was a standard 9".
