Sure, I'd love to. Alas, I have neither the time or money to get
involved in such a project. If I'm going to spend a year (minimum)
to put something like that together, I'll need a reasonable return
on my investment. My 8088 book took a man-year to write and edit.
I'm not willing to do that for something which will sell 1,000
copies (or less).

It sounds to me that if you feel you could get a good return investment for it you would be interested in doing the project(s). Have you thrown this idea in front of any publishers you've done previous work for? I can't believe that your reputation (at least from what I've seen as a hacker growing up reading your books) would not have some lean on a project of this nature in some of your old publishing houses.
