My favorite Pascal book, hands down, is:

Introduction to Pascal: Including UCSD Pascal
Rodnay Zaks

published by Sybex

This book is extremely worn around the edges, which is saying something
since almost all of my books look like new when I'm done! This book
was used a LOT.

Of course, if you're a ZCPR3 nut, why not just do the RIGHT thing and
get Turbo Pascal 3.0 for CP/M??? :-) I did manage to get a copy -
beautiful stuff - and a GOOD manaul.

Hope this helps...
