Seems an odd route, one SIMM and it is full. Two SIMMs and you lose DMA on the second. Three or more and you are looking at a RAMdisk. I would suggest looking into creating a 16 bit bank selector register or psuedo-PMMU that will allow access to the full 4Gbyte accessible to GSOS. The memory card itself is not in itself difficult, once you figure how to connect the two DMA bank select (term?) lines to work with a single SIMM bank. Just some random thoughts.
