Here's one to start you off:

It looks like a small 2 or 3 inch arm that attaches to the wall.  You
probably have to put a metal bar in the middle of the soap, or fasten
the soap upside down in a metal dish, but it sounds like a neat idea.
Should pay for itself quickly too, since dried soap lasts longer.

However, I think there HAS TO BE a better answer!

How about asking a friend with use of two hands?  Or ANOTHER friend with use of only one hand! (That could be fun....)
