I am currently working on a project to identify critical control functions in the food and beverage area of hospitality management. Phase two of this project will be to implement these control functions using a computer based management system. Any comments would be appreciated. I am especially interested in hearing from anyone working along similar lines, or someone who works in the Hotel industry. I have heard that Mariott have developed some innovative procedures in this area, but I have been unable to contact them as yet.
