The "obvious choice" is _Technology_and_War_, by Martin van Creveld.
It came out last year, so it should be very available.  There are some
other good books that cover shorter periods of time, such as the rise
of western military in the late middle ages-early rennaissance.

Also Fuller's _Military_History_of_the_Western_World_ (3 volumes) is
long, but easy to read and very comprehensive.  It's been recently
reissued as a trade paperback.

I'd second Liddell Hart's _Strategy_, but read it with a grain of
salt.  Remember Liddell Hart's purpose in this book was to push his
theory, not to provide a balanced, historical view of war.
