Greetings, I'm posting this question for Lacrecia Bowdoin: Does anyone out there have information on Amaranth and/or Quinoa concerning their history, botanical/genetic makeup, photosynthetic processes, etc.? I also would appreciate any information about using them ground into flour; and also any recipe recommendations. Thanks in advance for all info!
