Leave your headlights on low when this happens.  That way one driver on
the road (the oncoming driver) can still see to avoid a crash.  Two
blind drivers could easily run into each other.

Stare at the right-hand edge of the road.  Keeping your eyes there lets
you stay on the road and keep some of your vision.

My apologies to the author of the above if he meant simply flashing high
beams briefly as a signal to the oncoming car.

Ken Arndt gave me this suggestion, which works pretty well
if you have a passenger in the front seat:

Have the passenger hold the steering wheel while
you grab your shotgun from the backseat.  Proceed
to blow the other car's headlights out.
