Do there exist "texinfo" documentation files for either the GNUS
newsreader or Ispell (running inside of Emacs); files which can be
glued as subtrees to the *Info* tree?

There should be a gnus.texinfo with the GNUS source distribution. Get
tut.cis.ohio-state.edu:pub/gnu/emacs/elisp-archive/info/ispell.info.Z
or osu-cis!~/gnu/..., which documents the old ITS Spell and Twenex
Ispell. I don't know of any other Info-style docs for UNIX Ispell or
its GNU Emacs interface. The source includes a man page, though.
