I got about five or six responses to my original post. Some people
correctly pointed out that what is 'worthwhile' depends a lot on how
one uses his NeXT. I am not a unix guru, but I have a working
knowledge of unix and experience in a variety of languages. I don't
know a thing about Interface Builder or Objective-C, so any further
pointers in that direction would be appreciated.

Scheme is available from golem.ps.usi.edu, ftp/pub/NeXt (along with
Xnext and some other things)
f2c was recommended, but the site was unspecified.
