You have to use the search command, "s", to try to locate these doors. What you want to do is to get next to a wall that has no door visible on it, then start searching. It typically takes from 5 to 20 searches to find a secret door, but sometimes more. (A ring of searching helps quite a bit.) A search affects any spaces directly next to you, so you are really searching 3 locations on the wall at a time.
