I have transfered MacPaint files to PC by using kermit, but I haven't (yet)
managed to do it in the other direction. Also text files are a pain to transfer
thus, I can get them onto the Mac and then convert using MacWrite //, but I
haven't been able to do that the other way.

Be sure to set transfer mode to binary on both Kermits before sending the 
files.  The following command has worked for me:

MS-KERMIT>set file type binary

To get a macpaint file back onto the macintosh, you'll have to edit the
file type and creator (which are stored in the header for mac files).
There are a few ways to do this, but the easiest way is to use mactools, or
a similar program which allows one to edit this information...  This is
true whether you are using kermit to transfer the files, or the apple
file exchange program.
