How fast can the blitter copy blocks of memory?  I'm talking pixels
per second for one bitplane.

If you use the right channels, you'll get a word copied in two memory
cycles.
This is 2*560ns / 16 pixels = 70 ns/pixel or more than 14000000 pixels/second.
