On page 56 of the LaserWriter Reference, the author refers to 2K of
battery-backed-up ZPRAM.  Is this amount of non-volatile RAM available
on all versions of the LaserWriter?

This must just refer to the IINT and IINTX.  If you look in all the
PostScript Language stuff from Adboe re the LaserWriter, it talks about
dumping the entire EEROM into a 512-character PostScript string (page
303, PostScript Language Reference Manual).  In any case, on 64 bytes of
it seem to be accessible via seteescratch.
