How does the Finder/Multifinder handle files with the type "TEXT" and a totally empty signature (creator)? Does this mean that any application can try to open the document? Is it the same as having "????" in the creator?

An empty signature (one consisting of four ASCII space characters, or four nulls) is equivalent to "????" or to any other signature which is not that of an application. A document lacking a recognized application's signature will not be launched by Finder. The fact that the document's file type might be referred to in some applications' FREF resources doesn't make any difference. -- brecher@well.UUCP (Steve Brecher)
