Doesn't seem all that greedy to me. The university is presumably taking
care of shipping, inventory, and setup on the machines, providing staff
to take care of selling them, and so forth.  Sounds like a lot less markup
than Computerland gets. The university is also presumably providing
communications facilities and locally produced software. Every
university store I've dealt with has charged some markup to cover their
overhead.  Some even subsidize other university operations. I don't see
any obligation for the university to subsidize the sale of the Macs to
students beyond arranging the discounts in the first place.
