PEANUT BUTTER BAR COOKIES I've been making these since about third grade. The original recipe appeared in the LA Times, but I've modified it since. Dough: 1 cp whole-wheat flour 1 cp quick-cooking oatmeal 1/2 cp brown sugar 1 egg 1/2 t baking soda 1/3 cp peanut butter 1/2 cp butter Frosting: 1/4 cp peanut butter 1/4 cp butter 1/2-1 cp finely ground peanuts 1/2-1 cp powdered sugar Directions: Mix dough ingredients until crumbly. Press mixture firmly into a buttered pan. Bake at 350F for 25 minutes. Let cool. To make the frosting, throw a couple of handfuls of unsalted peanuts in a food processor, and then grind them into a coarse powder. Mix with the peanut butter and butter and then add powdered sugar until reaching the desired consistency. Spread frosting on cookies and cut into squares. Devour. Especially good with a tall glass of milk.
