Someone requested a sushi recipe. It's my understanding that sushi is just a rice roll and you can put anything in or on it that you want. For the rice, I've heard you can use what is probably called sticky rice, which I believe is just rice that has some sugar in/on it. You can also make your own sticky rice. Take about 3 Tablespoons of sugar and 3 Tablespoons of vinegar and heat them until the sugar has dissolved in the vinegar. Add this to the cooked rice that results from about 1-1/2 cups of dry rice (white or brown, short or long grain; I use long-grain brown rice). Then let this cool. For making the rolls, I recommend that you find a sushi mat, which is a bamboo mat that you use to roll the sushi. You can fill them with anything you want. I tend to use tofu, cucumber, carrots, fish patties (from the Chinese market), and avocado. For the wasabe, you can buy the Japanese kind. It comes in small cans that contain powdered horseradish. You just add water until it's the right consistency. You can also use the more American/European-type horseradish (the red or white kind), or you can make your own. I use the Japanese kind and my homemade horseradish. The homemade stuff is much more potent; I suspect wasabe contains some sugar to mellow out the flavor. ..aviva garrett Aviva Garrett Ultra Network Technologies / 101 Daggett Drive / San Jose CA 95134 aviva@ultra.com ...!ames!ultra!aviva (408) 922-0100
