Here is a great rice dish. According to the recipe, it is "a delicious accompaniment to grilled lamb and shrimp". I can verify the lamb part. Rice with Pine Nuts, Green Onions and Parsley 1/2 cup butter 2 bunches green onions, chopped 2 cups long-grain rice 1 cup minced fresh parsley 4 cups chicken stock salt and freshly ground pepper 3/4 cup pine nuts Melt half the butter in a heavy medium saucepan over medium heat. Add rice and stir until milky, about 3 minutes. Mix in stock. Cover and bring to a boil. Reduce heat and simmer until all liquid is absorbed, 20 to 25 minutes. Melt remaining butter in heavy medium skillet over medium heat. Add pine nuts and stir until golden brown, about 4 minutes. Add green onions and parsley and stir until heated through. Mix into rice.
