This is a _really_ easy and absolutely delicious dessert my SO made for me last night. It look great and tastes far more fattening than it is. If you use skim yogurt it will contain hardly any fat at all, but it sure doesn't taste that way. It's derived from "The Moosewood cookbook", which my SO calls 'the vegetarians bible'. Although we're both omnivores, we like the recipes so much in this tome that it is becoming a base for a lot of our cooking. >----------------------------- cut here --------------------------------< Fresh Berry Soup ================ Serves 2-3. For larger groups multiply the ingredients. 1 pint (250 ml) Raspberries, Blueberries or Strawberries. 2 pints (500 ml) Orange Juice (Fresh makes a BIG difference) 2 pints (500 ml) Skim Yogurt, Sour Cream, or Half & Half (or any combination thereof. Yogurt is best.) 2 Tbs. (30 ml) Honey 1 tsp. (5 ml) Cinnamon 1 tsp. (5 ml) Nutmeg *** Optional: 2 tsp. (10 ml) Dark Rum or Brandy. *** Garnish: Fresh mint leaves Whisk the yogurt into the orange juice until smooth. Stir in the honey, booze and spices. Let sit for at least half an hour in the refridgerator to fully chill. Wash fruit well. If using strawberries, slice in half (or even into slices if they're pretty big). Place fruit equally bottom of soup bowls (glass is best). Pour soup over the fruit. Sprinkle with remaining nutmeg and garnish with a mint leaf.
