There was a request for a lemon chicken recipe. This is one that I found in a booklet called "Easy Entertaining" from the Borden corporation. The recipe is reprinted (slightly edited) without permissions. Special Lemony Chicken 1/4 cup unsifted flour 1 teaspoon salt 1/4 teaspoon pepper 6 skinned boneless chicken breast halves 1/4 cup butter 1/4 cup lemon juice 8 ounces fresh mushrooms, sliced (about 2 cups) Combine flour, salt, and pepper and use mixture to dredge chicken. In large skillet, melt butter and brown chicken on both sides. Add lemon juice and mushrooms. Reduce heat; cover and simmer for 20 minutes or until chicken is tender.
