1 medium onion, finely chopped
1 medium orange
1.5 cups all-purpose flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp baking powder
1 egg
3 tbsp sugar
1 tbsp orange marmalade
1/3 cup vegetable oil
3 tbsp milk

Preheat oven to 400 degrees F. Put chopped onion in saucepan with water
to cover. Bring to a bowl and cook five minutes. Drain.
Pare the orange rind and place in food processor. Remove pith from orange
and section orange into 5 or 6 pieces. Remove seeds, and add orange to
food processor. Run food processor until rind is finely chopped.
Sift together flour, salt, baking soda, and baking powder. In a large bowl
beat egg with sugar, marmalade, and oil. Add orange and onion to the egg
mixture and blend well. Fold dry ingredients into the wet ingredients,
mixing lightly.
Spoon mixture into greased muffin pan, filling each muffin hole about
3/4 full. Bake until lightly browned, about 25 minutes. Makes 10 muffins.
