[rec.food.recipes] REQUEST: Quark

I was unable to buy Quark in this country. At
least I could not find it in Columbus, Ohio.
It is essentially unknown. Quark is a milk product, and
there is some (but only a faint) similarity with
cottage cheese. It is a sort of curd cheese,
which is, accoring to Webster, coagulated milk solid.
The consistency of Quark (its German name) is different
from cottage cheese, and it tastes really different.
It is also white, but unlike cottage cheese,
it is not curdy. One can mix it with milk,
sweaten it, and obtain a nice creamy product, that
can be topped with fruit or mixed with herbs.
If I ask people about Quark, they will always answer that
it is the same as cottage cheese. I know that this is
not true, because I really dislike cottage cheese and love
Quark.

These are my questions:
Is there an easy way to make it from scratch?
Is Quark available in this country?
If not, why is that?

I crave it!
