When I lived in Kitchener (Ontario, don't ya' know), I used to buy something called "cook cheese" from the local farm market. For the unenlightened, cook cheese is the consistency of rubber cement and smells, well, rank. It's yummy, though. The only thing I know about it's composition is that you start out with cottage cheese and (somehow) end up with cook cheese.
