Here are some recipes common to the Ethiopean Jews ( Phalashi ). My understanding is that these are NOT unique to them.

Ethiopean vegetable bowl 

(Amhari -  Atklit ,Tigre - Alz'e )

Ingredients:

3 large onions
4 large carrots
3 potatos
1/4 white cabbage
1/4 cup oil
1 head garlic
1/2 Teaspoon ground ginger
1/2 Teaspoon turmeric
1/2 Teaspoon black pepper
1 Teaspoon salt
4 cups water


1- Peel all vegetables , cut into small cubes. peel and mash the garlic.
2- Heat oil in a large pan and add vegetables. cover and saute 2-3 minutes.
3- Add the ginger, turmeric, pepper and salt and mix well.
4- Add the water , stir and cook over very low flame for 30-40 minutes.
   SErve hot.
      


Ethiopean lentil bowl ( Amhari - Mesir wat )

Ingredients:

1/2 Kg red lentiles
2-3 large onions
1/2 cup oil
3 Tablespoons tomato paste ( 26 %)
1/2 Teaspoon paprika ( either sweet or hot )
1 head garlic
1/2 Teaspoon ground ginger
1/4 Teaspoon black pepper
1 Teaspoon salt
3-4 cups water.

1-sort the lentils and soak in tap water for 30 minutes. Rinse in running 
  water and drain.
2-peal and finely chop the onions. peal and mash the garlic.Heat the oil in
  large pan and saute the onion until golden. Add tomato paste and paprika and
  mix. Add half the water and the garlic,ginger pepper and salt. Stir well
  and then add the rest of the water, stir again ,cover and bring to boil.
3-When the water boil, add the lentils ,lower the flame and cook 20-30 minutes,
  until the lentils soften. Serve hot.

Ethiopean dry peas bowl ( Amhari - Shero Wat )

Ingredients:

1/2 Kg dry green peas.
3 large onions
1/2 cup oil
1 head garlic
1/2 Teaspoon ground ginger
1/2 Teaspoon black pepper
1 Teaspoon salt
3-4 cups water.

1-Soak the peas in tap water for 20 minutes. 
2-Peal the onions and cut into small cubes. Peal and mash the garlic.
3-Heat the oil in a pan and saute the onion and garlic until golden. 
  Add the ginger, pepper and salt and 2 cups water. Stir well, cover and bring
  to boil.
4-When the water boil, add the peas and the rest of the water and cook 40
  minutes on a medium-low flame. Serve hot
