maury@linus.mitre.org (Maurine Jo Neiberg) (09/13/90)

This recipe is taken (without permission) from Cooking Light, the
Dec, 1989 edition. I've made it, and it's good.

Cinnamon-Apple Rolls

1 1/2 cups unsweetened Apple Sauce (You can make your own and have
it be chunky)
3 Tablespoons brown sugar
1 1/2 teaspoon apple pie spice, divided (I didn't know what this
was, so I gave a liberal shake of nutmeg, allspice and 1 teaspoon of cinnamon)
1 Tablespoon + 1 teaspoon cornstarch
1 Tablespoon + 1/2 teaspoon vanilla extract, divided
1 package dry yeast
1/3 cup warm water (105 - 115 degrees)
3 Tablesppons of sugar
3/4 teaspoon salt
1 egg, beaten
1/2 cup skim milk, scalded
3 1/4 cups all purpose flour, divided
Vegetable cooking spray
1/4 cup sifted powdered sugar
1 1/2 teaspoons water

Combine first 2 ingredients and 3/4 teaspoon apple pie spice in a
saucepan, Place over medium heat and cook for 20 minutes, stirring
frequently. Combine cornstarch and 1 Tablespoon vanilla into
mixture. Cook 1 minute, or till thickened. Remove from heat and
let cool.

Dissolve yeast in warm water in a bowl. Let stand 5 minutes. (in
other words, proof the yeast) Add remaining 3/4 teaspoon apple pie
spice, sugar, salt and egg. Stir. Add milk, stir. Gradually stir
in 3 cups flour to make a stiff dough. Turn out onto a lightly
floured surface and shape into a ball. Cover and let rest 5
minutes. Knead dough until smooth and elastic (10 minutes) adding
remaining flour to keep dough from sticking.

Place dough in large bowl sprayed with cooking spray, turning to
coat top. Cover and let rise until doubled, approx 45 minutes.

Punch down dough, divide in half.

Take half the doughand roll out into a 12x9 inch rectangle on a
floured surface. Spread 1/2 of applesauce mixture on it, leaving a
1/2 inch margin on one side. Beginning at wide end, roll up jelly
roll fashion. Pinch seam to seal, but do not close ends of roll.
Cut roll into 12 slices, arrange cut side up on cookie sheet sprayed
with cooking spray. Repeat with other half.

Cover and let rise for 45 minutes. Bake at 375 degrees for 20
minutes. Remove from baking sheet and place on wire rack. Combine
powdered sugar, 1 1/2 teaspoon water and remaining 1/2 teaspoon
vanilla. Brush over rolls.

Yield 2 dozen. Approx 100 calories per roll
