[rec.food.recipes] OVO-LACTO: Peach Crepes and other ideas

rod@isi.edu (Rodney Doyle Van Meter III) (09/20/90)

Here's a simple use for fresh peaches: topping for waffles or pancakes,
or filling for crepes.

I'm a Bisquik fan, so for crepes, I make very thin pancake batter and
add sugar and vanilla.

For the filling, wash and slice the peaches thin (no need to peel).
Saute them in butter, sprinkling with sugar, for just a minute or two.
If the peaches are very ripe, they won't need much sugar or cooking time.
If they're less ripe, use more sugar and cook until they're soft. One
large peach will do for two servings, unless you're greedy.
