SPINACH ROLL 1 pkg frozen puff pastry, defrosted 2 boxes frozen chopped spinach instant mashed potatoes (flakes or granules) salt, pepper, garlic powder to taste 1 egg, beaten sesame seeds Unwrap the spinach, and defrost in a bowl. Add enough of the instant potatoes to soak up the spinach liquid, and make a medium-soft mixture. Add seasonings to taste. Divide pastry in half, and roll each into a fairly thin rectangle. spread each with half the spinach mixture to within 1 inch of the edges. Roll up along the longer side. Seal edges. Put on a greased (or Pammed) baking sheet. Brush with beaten egg, and sprinkle with sesame seeds. Bake at 375 degrees till browned. Cut into slices before serving. Makes about 24 slices. Even some spinach haters (namesly my son-in-law) like this. Rolls can be frozen. They slice best when cold, so wou might want to make them ahead and reheat. NOTE: Puff pastry dough can be filled with all sorts of yummy things like sauteed mushrooms and onions, browned seasoned ground meat, etc.
