Fear Not...Here it is ;
COCONUT CREAM PIE
One 9" pastry crust baked golden
In a saucepan mix;
2/3 cup white granulated sugar
2 1/2 tbs. cornstarch
1 tbs. flour
stir in 3 cups milk
Cook over moderate heat until mixture coats a spoon or looks to have thickened
a bit...stir constantly
slightly beat 3 egg yolks (best done ahead 'cause
you're busy now, Right)
add a bit of hot mixture to yolks and stir well then add all
the yolk mix to the pot...stir on heat until thick.
add 3/4 cup grated ( medium) coconut
( I like my coconut toasted)
1 tbs. butter
1 1/2 tsp. vanilla
Stir well and pour into baked pie shell...you could make a meringue with the
whites but we prefer whipped cream...I make meringues later
or coconut meringues......enjoy.
