[rec.food.recipes] OVO: Divinity Fudge

	I don't know how this request got in this newsgroup---
it could 've been a blurb in my system but here goes:

I saw a request for the recipe for old-fashioned Divinity Fudge.
This is a long-standing favorite in my family. Before I give you
the basic recipe, you can add any sort of candied fruits,
semi-sweet chocolate bits, mint chocolate bits and food coloring
(my Mom likes to make it orange in color and flavor at Halloween)
for several variations. Just go ahead and have some fun.

You need:	3 C. sugar
		3/4 C. light corn syrup
		1/2 C. water
		2 egg whites
		1 tsp. vanilla (or whatever you choose)


	In a heavy saucepan, over medium heat, cook sugar,water,and syrup
til it reaches the hard ball stage (about 248 degrees ona candy thermometer).
Remove from heat and let stand to cool til 220 degrees WITHOUT stirring.

	Place egg whites in mixer bowl (should use heavy duty mixer!!!!)
and whip at high speed til soft peaks form ,about 1 min.

	While still whipping at high speed, add sugar mixture in a slow,
steady, thin stream. Once all sugar mixture is added reduce speed to 
medium; add vanilla or other flavoring now. Continue to whip for 20-25
minutes. About 5 min. before it's done add fruits, bits,or candies.
(You'll get better at judging when to add them the more you make it
and it sure is fun 'n' tasty trying).

	When done, drop on waxed paper by tbspfuls immediately!! Be 
sure to have plenty of helpers--it shouldn't cool much before its
placed on paper--or you'll never get it out of the pan.
