_The Save-Your-Life-Diet High-Fiber Cookbook_ was written by David and Barbara
Reuben in the mid-70's.  I don't even know if it is still in print.  It 
contains some spectacular recipes and some ho-hum ones.  Here is one of 
the former, as adapted by my father and then by me:

1 Tbsp. olive oil
5 cloves minced garlic
1 Spanish onion, chopped
1 bell pepper, chopped
1/2 lb mushrooms, sliced
2 tomatoes, chopped
2 cups chicken or turkey stock
2 tsp. ground cumin (or use more, if you like cumin a lot)
2 tsp. dried oregano
1 bay leaf
1 cup whole wheat berries
Salt to taste

Saute garlic, onions, pepper, and mushrooms a couple of minutes.  Add tomato
and saute a little more.  Add everything else and boil at least 40 minutes,
until the wheat berries are a pleasant chewy consistency.

It's best to make this the night before cooking the bird.  Roast it breast-
down; the juice soaks into the breast.  You can turn it upside-down to brown
the breast, but only at the end of the roasting.
