Here's a recipe for a favourite cake of mine.... be warned, it'll do no good to your waistline at all !! It's adapted from a recipe which appeared in 'Taste' magazine in 1987 or '88, used without permission. West Country Apple Cake ----------------------- * 8oz (250g) plain flour * 1.5 teaspoons baking powder * pinch salt * 4oz (100g) butter * 8oz (250g) dessert apples, peeled and cored * 4oz (100g) sugar * 2oz (50g) sultanas * 1 beaten egg Grease an 8-inch (20cm) round cake tin, and make sure you do it *well*. Preheat oven to 180C/350F/gas mark 4. Sieve flour,salt and baking powder in a bowl, and rub in butter until the mixture looks like fine breadcrumbs. Or if lazy like me, bung the whole lot in a food processor and whizz for a few seconds. Cut apples into half-inch dice, and mix with the sugar and sultanas in a bowl. Add the flour mixture, and stir well. Then add the egg and mix to a soft crumbly dough. Add no extra liquid, even if it looks totally crumbly !! Press the mixture lightly into the cake tin, and bake for 50 mins, or until nicely brown. Then turn the cake out onto a wire rack (see, I told you to grease it well), and leave to cool. The traditional way to eat this is to split it in half and spread with butter, but I like it on its own, or served as dessert with cream. best wishes, Julian Templeman ..ukc!dircon!uad1031
