A recipe for a brunch item was requested a while back, and for
some reason I was rendered unable to post to newsgroups.  Hopefully
this will go through!

EGGS & POTATOES

(serves 4)

Ingredients:

6 large eggs
2 medium potatoes, diced in 1/2" cubes
1/2 a medium onion, finely chopped
1 tbl Mrs. Dash seasoning (no salt variety)
1 tsp Lawry's Seasoned salt
1/4 tsp ground black pepper
1/2 cup grated Romano cheese (it's got more of a bite than Parmesan)

Directions:

Beat eggs in a medium bowl.  Add Mrs. Dash seasoning, Lawry's
seasoned salt and black pepper.  Beat for another minute.  Add
Romano cheese and beat for another minute.  Set aside.

In a large skillet, melt 2 tbls butter over medium heat.
DO NOT BURN THE BUTTER.  Add the chopped onion and sautee until
the onions are almost a golden brown.  Add diced potatoes and
flip them around in the pan until the onions and potatoes are
covered with the butter.  Sprinkle potato/onion mixture with about
1/2 tsp of Mrs. Dash seasoning.  (Note: you might have to add more butter,
but you don't want a POOL of it in the pan!) Try to distribute the 
potatoes/onions evenly along the bottom of the skillet so they 
will become a golden brown.  Cover and cook for about 4 minutes.  
Uncover and turn the potato/onion mixture to brown the other side, 
covered, 4 minutes, or until potatoes are just about cooked (NOT TOO 
SOFT!).  Pour egg mixture over potato/onions (sprinkle the top with
an additional 3 tbls of grated romano cheese if you want it cheesier), 
cover skillet and reduce heat to simmer.  This will make the eggs very 
fluffy.  Simmer, covered, for about 5 minutes.  Uncover and check eggs; 
they should have risen quite a bit and have become almost dry on top 
(like an omelet).  Cut apart the egg mixture in the skillet in quarters 
and flip to cook the other side of the eggs, another 3-4 minutes or so.  

Remove from heat and let sit, uncovered, for about 3 minutes.  Enjoy!
This goes especially well with buttered toast, a big cup of coffee
and an even bigger glass of ice cold orange juice!  You won't eat
again until dinner time!
