Yet another recipe from my sister's wedding. It is one of those DENSE cheesecakes. The trick is finding a hiding place so it can sit for the requisite 12 to 24 hours. Cheesecake (1) beat for 15 minutes: 3 packages cream cheese 4 eggs 3/4 cup sugar 1 tsp vanilla (2) then beat in another bowl for 5 minutes: 1 pint sour cream 1/2 cup sugar fold (2) into (1). Grease a spring form pan, dust with graham cracker crumbs and pur in the batter. For chocolate swirl cheesecake, add either 1/2 cup melted semisweet chocolate or a mixture of 1/4 cup cocoa and 1/2 cup sugar to half the batter and swirl the plain and the chocolate batters in the baking dish. bake at 350 F for about 45 minutes (until cracked and settled and slightly darker). Turn the oven off but leave the cake in the oven for another hour. Now comes the hard part: wait at least 12 hours before serving.
