[rec.food.recipes] OVO: Potato Gnocci

Here's one for the starving student who requested cheap potato recipes
-- it's based on a recipe from "Eat This -- It'll Make You Feel
Better."

Potato Gnocci (which is kind of like a pasta.)

3 peeled potatoes
2 eggs
1 1/2 - 3 c. flour

Boil the potatoes until softish, but don't overboil.  Mash in the eggs,
and add flour bit by bit until the dough forms a ball, not too sticky.
Roll a managable amount at a timeout into snakes about an inch in
diameter.  Cut into 1/2 inch lengths, flattening each slightly, and
denting the center of each with your index finger's knuckle.  Drop into
a big pot of boiling water and let boil for about eight minutes.
(Taste one to make sure they're done.)  Serve with your favorite tomato
sauce and grated cheese, as you would pasta.  Sorry, but I don't
remember how much this makes.
