Japanese Salad Dressing is generally a combination of soy sauce, vinegar, sesame oil, and some grated ginger root (or ginger "juice"). Sometimes it will also have a bit of miso, sesame paste, or wasabe powder added to it. Below is a simple recipe that should be close to what you remember. You can play around with the ingredients until you hit on something you like. Japanese Salad Dressing ----------------------- 1/2 c soy sauce (light, Kikkomann's) 1/4 c rice wine vinegar 1 T sesame oil (dark, oriental kind) 1 t grated ginger 1 t (or less) wasabe powder (green horseradish powder) 1 t sugar If you can get hold of some sesame paste, you can add about a T of that to make for a more opaque salad dressing. Mix ingredients well and chill. Enjoy, Carol (riacmt@ubvms)
