The subject line probably says it all, but here goes. My own concoction. It is a bit tedious, but (I think) its worth it. Start with thickly sliced bread pieces, and (carefully) slice into them to form pockets. Fill the pockets with a mixture of fruits, nuts, spices, whatever combination you think you'll like. I've used combinations of sliced fruit (apples, peaches, bananas, etc) raisins, cinammon, almonds, brown sugar....you get the idea. Mix the french toast dipping mixture. Eggs, milk, and I like to add cinammon and sometimes nutmeg. Dip the stuffed pockets into the egg mixture, coating both sides. Sometimes I lay thinly sliced almonds on the dipped bread before cooking, it adds some cruchiness. Lay the stuffed, dipped bread on a Pammed (or whatever oil you use) hot waffle iron. Close and cook until done. I don't time this, really, just guesstimate, but long enough for the fruits and seasonings to cook and meld together, and for the outside to get crunchy. try it, you'll like it!
