Here are a few more cookie recipes. They've been copied, handed down and, for the most part, modified. I really don't remember where I first got them. ***** "HEROIN" COOKIES 2 sticks Oleo, softened 1-3/4 cups Flour 1 cup Sugar 1/3 cup Poppy Seeds 1 Egg Yolk 1/4 tsp grated Nutmeg 1 tsp Orange Extract 1/2 tsp Almond Extract Cream together Oleo, Sugar, Egg Yolk & Extracts. Add the sifted Flour, Poppy Seeds and Nutmeg. Refrigerate for at least 2 hrs. Roll out on floured surface (usually though, I roll out between pieces of Saran Wrap) to about 1/4" thickness. Cut out desired shapes, carefully place on ungreased cookie sheet, bake at 350oF (preheated oven) for 8-10 mins. Cool slightly on cookie sheet before transferring into container that can be tightly covered. Depending upon size, makes about 4 doz. ***** NUTTY JAM BALLS 1/2 cup Butter (use the "real" thing!) 1/3 cup Sugar 1 Egg (separated) 1/2 tsp Vanilla Extract *** 1 cup Flour *** 1/2 cup grated Walnuts Raspberry, Strawberry, or Apricot Jam Cream Butter, Sugar, beat until fluffy. Beat in Egg Yolk and Vanilla. Sift in Flour, mix well. Refrigerate for at least 1 hr, then roll into 1-inch balls, roll these in the slightly beaten Egg White, then roll in the nut flakes. Place on lightly greased baking sheet and press a hole into each one with a thimble. Fill this with Jam. Bake at 375cF (preheated oven) for 13- 15 min. Store in tightly closed container. Makes ?? = but since they don't last long, anyway, make two batches while you're at it! :-) ***** WALNUT CRESCENTS 1/2 cup Butter (again, the "real" thing) 1/2 cup Sugar 1/3 cup ground Walnuts 1 cup Flour 1 tsp Vanilla Extract Confectioner's Sugar (optional) Cream Butter, add sugar, beat until very light and fluffy. Add Nuts and Vanilla Extract, then add Flour. Mix until dough holds together (if necessary, add 1 to 2 tbsps of cold water. Using about 1 tsp of dough, shape into a roll, approx. 2-1/2" long, tapering the ends. Bend into crescents and put on ungreased baking sheet, flatten slightly (for more even baking). Bake at 300oF (preheated oven) for 20 to 25 min or until lightly browned -- check one for "done-ness" inside. If desired, dust with the Confectioner's Sugar while still warm, but they taste just as good without it so I'd say save yourself the extra calories. Store in tightly closed container. ***** PASTEL COOKIES (they add a nice touch of colour to your cookie platter) a) RED ONES: 3/4 cup Butter or Margarine ------------ 1/4 cup Sugar 2 Eggs 1 tsp Vanilla Extract 1 tsp Almond Extract 1 pck Cherry Jello (3 oz) *** 2 1/2 cups Flour 1 tsp Baking Powder *** Chocolate Streusels Green Sugar Cream Butter, Sugar, Eggs, add Extracts and Jello Powder. Sift in flour and baking powder. Roll pieces of dough into 3/4" balls. Place 3" apart on ungreased baking sheet, flatten with bottom of large glass. Sprinkle green sugar around the edge, throw some Chocolate Streusels in the middle. Nonpareils can be used, but that's messy! Bake in 400oF (preheated oven) for 6-8 min. Keep in tightly covered container. Makes about 4 doz. b) GREEN ONES: same as above, but use LIME JELLO (instead of Cherry) --------------- LEMON EXTRACT (instead of Almond) DO use green sugar for the edges on this one, too, I've tried red and it fades and doesn't look good. The green gets real intense, just right for X-mas. ***** RASPBERRY BARS (I don't think they're all that great but kids loved 'em) 3/4 cup Butter or Margarine 1 cup tightly packed Brown Sugar 1 tsp Vanilla Extract 1 1/2 cups Flour 1/2 tsp Baking Soda 1 1/2 cups Old-fashioned Oatmeal 1 jar (10 oz) Raspberry Jam Cream Butter and Brown Sugar until fluffy, add Vanilla Extract. Mix dry ingreds., add to butter/sugar mixture, mix well. Press half of crumbs into greased 13 X 9" baking pan. Spread with the Jam, crumble remaining mixture on top. Bake at 400oF (preheated oven) for 20 to 25 min. Cool, then cut into bars. I don't know how they store because the kiddies devoured them as soon as they were cool enough. But I guess they would have to be put into a tightly closed container or they'd turn into lethal weapons. ***** Not really a Christmas Cookie, but maybe a bit more "healthy" than the preceding holiday overloads: OATMEAL RAISIN CLUSTERS 2/3 cup Margarine, melted 1 cup Brown Sugar (packed tightly) 1 Egg 1 tsp Vanilla Extract 1 1/2 tsp Orange Extract 1/2 tsp Rum Flavouring (optional) 1 tsp grated Orange Rind (optional) Cream this together, then add: 1/2 cup Whole Wheat Flour 1/2 cup regular Flour 1 tsp Baking Powder 2 cups Old-fashioned Oatmeal 1 cup (scant) Raisins Mix well, drop by tablespoon-ful on greased cookie sheet, bake in 350oF oven (preheated) for about 15 min.
