[rec.food.recipes] BEEF: Turkish Meatballs

Ingredients:
	     1 lb (450 gr.) minced beef (ground beef)
	     1/4 cup (50 gr.) rice
	     Salt and black pepper to taste
	     1 cup (60 gr.) parsley (finely chopped)
	     1/2 cup (50 gr.) flour
	     5 cups (1 1/4 liters) water
	     1 whole onion
	     2 tablespoons butter
	     4 carrots (diced)
	     4 potatoes (diced)
	     2 eggs
	     4 tablespoons lemon juice

Cooking:
 
 Place meat into a bowl, add rice, salt, pepper and parsley.  Knead
 together well.  Wet palms and form walnut-size meatballs.  Place them
 into a bowl with flour and shake until meatballs are coated with
 flour.

 Pour the water into a pot.  Bring water to a boil, add onion, butter,
 carrots, and a little bit salt.  Add meatballs gently into the boiling
 water.  Add potatoes when meatballs half cooked (about 20 minutes).
 Lower the flame and simmer everything about an half hour.  Remove from
 heat and discard the cooked onion.

 Sauce:

Break the eggs into a bowl and beat with lemon juice.  Gradually add a
cup of hot broth from the pot into this mixture while string.  Return
this sauce to the meatball pot while string meatballs.


Serve hot as a main course in individual soup bowls (serves 6).  Afiyet
