The following recipe is an adaptation of a normal apple pie recipe, for
the high-speed oven (microwave + hot air).
 
Apple Pie, for high-speed oven.
------------------------------
 
200 gr    Flour
130 gr    Self-rising flour
200 gr    Butter (margarine OK)
50 gr     Sugar
2         Eggs
4         Spoonfuls of water
700 gr    Apples, any kind, peeled and cut in parts. You'll need about
          1kg of uncut apples.
Raisins   Up to 100 gr. If you like, you can put them in hot water for
          an hour to let them "swell" a bit.
Cinnamon
some salt
 
Mix the flours, butter and  sugar together. Don't mix too long, or the
baked result will be rock-hard. Beat the two eggs loose with the water,
and mix gently through the dough. Put a bit of eggs/water aside for the
top of the pie. Let the dough rest for 30 minutes in the fridge.

While the dough is resting, you can peel & cut the apples.

Put the dough in a buttered pie plate (I can use a standard metal pie
plate in my oven). Leave some dough for the top of the pie. The dough
will be very sticky, so use a wet spoon to work it into a smooth layer
all the way to the rim of the plate.

Put the apple-parts in a loosely closed bowl in the high-speed oven,
and cook for 4 minutes at microwave-only, highest position. The
apple-parts should now be "glassy". Mix the apples with the raisins,
add sugar to taste. Put the mixture in the pie shell.

Sprinkle cinnamon generously on top. Use the remainder of the dough to
make some pattern on top of the pie. Do not cover the pie completely,
there must be openings for steam to escape. Spread the remainder of the
eggs/water over the dough. Sprinkle some more cinnamon over the pie, to
give it a brown colour.

Put the pie for 19 minutes in the high-speed oven, combination position
(hot air + microwave), highest temperature. Do NOT pre-heat the oven.

Remove the pie immediately from the oven, and let it cool to room
temperature before removing the pie plate.
